Easy Lemon Pancake

I was trying to make this recipe - Lemon Pancakes, but all the local grocery stores ran out of flour and baking powder. I found King Arthur Flour brand pancake mix, but made the following substitutions: buttermilk instead of regular milk, add 1/4 tsp lemon zest (per the recipe). Serve with berries and maple syrup.

Turkey Meatloaf with Zucchini and Feta

Turkey Meatloaf with Zucchini and Feta

1/2 cup panko breadcrumbs
1/4 milk
2 lbs ground turkey
2 beaten eggs
2 t onion powder
2 t granulated garlic
1 t salt
1 t pepper
1 t Italian seasoning
1 T Worcestershire sauce
1 cup feta cheese
2 cups shredded zucchini, water squeezed out
1 cup marinara sauce, divided

1.  Preheat oven to 350 degrees
2. In a large bowl mix together the panko, milk until it forms a past
3.  Add in the ground turkey, eggs, seasonings, Worcestershire sauce, feta cheese, zucchini, and 1/2 cup of the marinara 
4.  Mix until all of the ingredients are combined
5.  Place on baking pan, sprayed with cooking spray, and form into a loaf
6.  Spread the last 1/2 cup of sauce over the top
7.  Cook for 1 hour and 15 minutes, or until an internal temperature of 160 degrees
8.  Let sit for 5 minutes then enjoy!
